I always like to find a healthy recipe that can replace an unhealthy vice in our diet. I'm not sure who invented the KALE CHIP but for those of you who like chips/crisps, this is a great alternative. Regular potato chips are full of hydrogenated fats, MSG, sugar even. They don't offer much nutrition and often leave us feeling ill.
So today I offer you a new way to satiate your chip hunger with something healthy and really fun to make!
You will need:
1 large, 2 small heads of green kale
4 tbsp olive oil
1 garlic clove crushed
1/4 tsp cayenne
1/4 cup nutritional yeast (optional)
salt and pepper
1. You want big, healthy, leafy kale. The heat of the oven shrinks the kale so leave the pieces large! Wash the kale thoroughly!
2. Strip the kale from its stalk by running your fingers from the base to the tip of the stalk. This part is fun!
3. Use a clean, dry tea towel and dry the leaves well.
4. Combine the olive oil, garlic, cayenne(if you like heat) and pour over the kale leaves.
5. Sprinkle the nutritional yeast over the kale leaves. Nutritional yeast is a deactivated yeast often used in vegetarian and vegan recipes for it's nutty or cheesy flavour. It is optional but very yummy!
6. Now the fun part. This is a great recipe for kids cause it gets messy and fun! Massage the oil and yeast into the leaves. Squeeze with your hands until all the leaves are well covered.
7. Lay parchment paper onto cookie sheets and spread the kale evenly. One layer of kale only, do not over load the tray. Place in the oven at 200 degrees for 20-30 minutes. Check and turn the kale at least once so they crisp up evenly.
8. Transfer crispy kale chips to a bowl and enjoy! You can make an extra large batch and store them in an air tight container for several days. They won't last that long but you can try!
Now how am I going to resist this bowl I just made before my friend Heather comes over for dinner tonight?
